It is a cheese made from fresh, raw and whole goat's milk . It is obtained by curdling very slow, and refined on a sheet of chestnut or plane tree, which will suck moisture and thus give the Mothais sheet on a soft paste, creamier and a thinner crust.
It will keep cool, in the vegetable drawer of the refrigerator.
