100% Cornicabra olives, a variety from Toledo in Castilla La Mancha (Spain). The olives are picked late in the end of December, to be fermented while a maturation takes place then, checked every day. To be paired on top of mashed potatoes, meats and fishes, winter soups or salads of cold.
